• 1 Kilo Lomo de cerdo en una sola pieza

  • ½ taza de cebolla blanca en rodajas
  • 3 dientes de ajo picados
  • 1 ½ taza de ciruelas secas picadas o enteras
  • 1 ¼ taza de jugo de naranja
  • 1 ¼ taza de caldo de pollo
  • 1 cucharada de tomillo fresco
  • Sal y pimienta para sazonar la salsa
  • Mantequilla para engrasar la bandeja.


Step-by-step elaboration

Preheat oven to 180C degrees (350F). Season pork with salt and pepper. Heat the oil in a large frying pan and roast the meat, everywhere. This step will take about 8 minutes. Remove from the pan and place in an ahorno tray or a pre-greased refractory with butter.
In the same pan, sauté the onion and garlic over medium heat for a minute, then add the prunes, orange juice, chicken broth and thyme. Continue cooking until it starts to boil, about 3-4 minutes.
Pour this mixture into the blender jug and grind until a very smooth sauce remains, then top the meat with this sauce.
Cover the meat with foil and bake for 50 minutes, then remove the foil and let cook uncovered for 10 more minutes to brown the meat. Remove from the oven and let stand for 5 minutes before cutting and serving the meat. Benefit!

If you do not have fresh thyme, use 1/2 teaspoon of dried thyme.
